Craig BBQed some amazing salmon for Josh's dinner.

Salmon with rice and corn on the cob. Delicious.

He also wanted cheesecake.

I don't make it very often. I'd be rolling instead of walking. But it is delicious. I'm grateful to my college roommate who taught me to be brave and try fancy recipes.

Flan

I discovered flan on my mission. I didn't get very much of it, but I loved it.

I have had it a few times here and there since.

Last summer in Spain, I got the last piece of flan. I felt bad though, because the other dessert that was ordered was a liquored cake that was inedible.

I have purchased it at a store, but store bought flan is like store bought pie. Not nearly as good as homemade.

I had a friend make me some back in Madras, but that was about five years ago.

Last week, Craig and I spent our anniversary in Salt Lake City. We dropped the boys off with my sister -in-law and we spent the night at the Marriott  It was wonderful. We wandered Temple Square and looked at the lights. We caught two high school choirs performing. The choir from Orem in the Assembly Hall was simply amazing.

We went to dinner at a Brazilian Grill. The meal was amazing. They had flan on the menu, but the waiter was less than enthusiastic about it. His mother makes better. So I passed it up for creme brule.

But Thursday I had invited my nephews and nieces over -- the ones in college that live the next town over. Tyson has just returned from a mission in Mexico, and Jeff is getting ready to leave for a mission in Mexico.

I wanted to make my Mexican dinner for them. So I made my beans, and my chile verde. My rice -- not my favorite, but you have to have rice with a Mexican meal. I got the tortillas and the cheese. I made horchata and jimica -- my family was not to impressed with the jimica. They thought it was too bitter, but I liked it.

And I looked up a recipe from the internet for flan. I decided to try it. You know, it is not that hard. I melted one cup of sugar into syrup and poured it into a 9 inch pie dish. Three eggs, a can of evaporated milk, a can of sweetened condensed milk and a tablespoon of vanilla later, I was ready to bake for one hour at 350.

It turned out really good. I was glad that I put a piece of foil under the dish to catch the overspill, because I did get some. But all in all, it was really good.

That night I made another dish for Boaz to take to school. I looked up the history for him to do a short report and found out that flan originated in Spain and France and has since spread through out the world -- as far as Japan, India and Indonesia. I was surprised. I thought it was a Mexican thing.

Who knew I could make flan. I will have to make it more often. :)
